Spicy Crispy Chicken Nuggies
/Skip the drive thru and make these crispy spicy chicken nuggets instead. Ever since I was little I have loved chicken nuggets especially when they had some heat to them. I love dipping them in ranch or honey mustard and having some celery (or french fries) to munch on as a side. I’m all about finding healthy alternatives to my favorite dishes, so when I made these, they became a staple in my home.
Ingredients:
1lb organic ground chicken
1/4 cup + 1 cup of almond flour
1 cup crushed pork rinds
2 tsp cayenne (add some extra if you like it spicy)
½ tbsp of paprika
½ tbsp of onion powder
¼ tsp garlic
3 eggs
¼ cup of Buffalo Sauce
Crack of sea salt and pepper
Sprinkle of TJ’s 21 seasoning salute*
*optional but we know I love that FLAVOR
Recipe:
In a bowl add in ground chicken, ¼ cup of almond flour, and a dash of sea salt and pepper. Mix ingredients.
Once well mixed, grab a plate, cutting board, or pan and line with parchment paper. Shape the mixture into nuggets and pop in the freezer for about ~30 minutes (they’ll be hard to bread if not frozen).
Grab another bowl and mix the remainder of almond flour, crushed pork rinds, cayenne pepper, paprika, onion powder, garlic, and TJ’s 21 seasoning. Feel free to also add some more sea salt and pepper.
In a separate bowl whisk eggs and buffalo sauce.
Once all mixed, grab your nuggets from the freezer and dip the nuggets in the egg mixture and then coat in the ‘bread’ mixture.
Place in your air fryer and pop in at 400 for 15-20 mins, if you don’t have an air fryer, place them in the oven at 375 for 20-30 mins
