Chocolate Coconut Bliss Balls

These 4-ingredient coconut bliss balls are absolute magic. They remind me of a ~healthier~ version of bounty bars which I adored as a kid and if you make the recipe with the optional ingredients it tastes just like an almond joy. I highly recommend making a batch of both to keep in your fridge at all times for that chocolate craving. I don’t have the biggest sweet tooth but I find it important to keep chocolate on hand at all times. 

This is one of my favorite recipes as I’m all about creating healthy alternatives to my favorite dishes (and now candy bars) to be able to have the best of both worlds of nourishing myself while enjoying myself. 


Ingredients: 

  • 1 cup shredded coconut 

  • ½ - ⅓  cup of coconut cream 

  • ½ - 1 cup of chocolate chips (I used Hu Kitchen paleo chocolate) 

  • 1 - 2 tsp of monk fruit or sweetener of choice 

  • *Sprinkle of sea salt

  • *¼ chopped almonds 

  • *1-2 tbsp of almond butter

*optional to elevate it to a DIY almond joy which I highly recommend 

Recipe: 

  1. In a bowl add shredded coconut, coconut cream, and monk fruit (if adding chopped almonds and almond butter include in this step as well). Stir ingredients until well mixed. Texture should be sticky but easily moldable. 

  2. On a baking tray or big plate, line with a piece of parchment paper. With a cookie scoop or your hands form a 1-inch ball or bar that is firmly packed together and place on the parchment paper. Pop in the freezer for 30 minutes. 

  3. After 30 minutes pull out the tray/plate. Place the chocolate chips in a microwave safe bowl and microwave for 1 minute. Stir until fully melted. 

  4. Dip your balls/bars in and gently toss until fully coated. Place back on the parchment paper until all are coated in chocolate. Top with sea salt or some extra coconut shreds/chopped almonds. 

  5. Pop in the fridge for 15 minutes (or until the chocolate hardens) and once the chocolate has set ENJOY.
